They say that breakfast is the most important meal of the day, and that one should never skip it.
During weekday I tend to choose between three breakfast options as I do not have many time to eat. However on weekends I like to prepare my breakfast and try new options. I would like to share a recipe that I have enjoyed very much since it is super nutritious, tasty and easy to make.
The main ingredient of this breakfast is a super food called quinoa. This grain is high in protein (similar to the one found in milk and more than the protein in wheat or millet). It is a good source of riboflavin -- riboflavin helps reduce the frequency attacks in migraine sufferers by improving the energy metabolism within the brain and muscle cells.
Moreover, The saponins from quinoa are used to promote healing of skin injuries in South America, making it a good antiseptic. For those who care about calories in food, it only has 172 calories per ¼ cup dry quinoa. Furthermore, it's gluten-free! Since it is not related to wheat or grains, many have discovered that when eating quinoa, they feel better and lose weight. Finally, it is a complex carbohydrate with low glycemic index (which is good for weight management.)
Quinoa Delight
Ingredients:
- 2 cups of almond milk
- 1 cup quinoa, rinsed
- 3 tbsp. light brown sugar
- 1/8 tsp. cinnamon
- Blueberries (or your favorite fruit)
Instructions:
1. Place a pot on the burner and add the almond milk. Heat it to a slight boil.
2. Add the quinoa and reduce to simmer.
3. Stir in light brown sugar and cinnamon.
4. Let it cook. Cover the pot with a lid until milk is absorbed (8-10 mins)
5. When the quinoa is done, stir in fresh blueberries.
6. Serve!
