A chocolate chip cookies is my favorite guilty pleasure. The reason being that its small size, flavor, and golden tone makes it the perfect sweet to sin with. However, the problem with guilty pleasures, is that since they are forbidden, we are naturally attracted to them… In the case of chocolate chip cookies, what makes them an "unhealthy" sweet is the preparation... So that made me think and realize that I could find a healthier way to prepare it, thus making it a treat rather than a guilty pleasure.
Using a regular chocolate chip recipe, I switched the unhealthy ingredients to healthier substitutions, which I found in the organic food market near my home.
So the recipe that I came up with is the following….
Ingredients
200 g (2 cups /7 oz) organic oats used instead of flour
60 g (2 oz) coconut oil (melted) used instead of butter
60 g (2 oz) panela or agave syrup used instead of sugar
1 organic egg
1 tbs of vanilla extract
100 g (3 1/2 oz) dark organic chocolate 65% – 90 % based on your taste used instead of Hershey chocolate chips
Instructions:
Preheat your oven to 150 C / 300 F.
Combine oats, coconut oil, panela and egg into a mixing bowl.
Mix through with your hands or spatula until the ingredients come together.
Note: Let the mixture rest for 5 minutes – so the oats soften a little more and hold together when squished.
Chop up the chocolate with a large knife.
Add chocolate to the oats and mix through.
Form into 12 cookies…I love using a small ice cream scoop for this – so easy that way.
Place onto a prepared baking tray and flatten slightly
Note: So the cookies don't stick to the tray, spray pam butter and cover with flour
Bake for approximately 15-20 minutes or until golden.
Remove from the oven and cool completely.
Enjoy and share recipe!
Once it took my first bite, I was SOOOOO HAPPY because they taste much better than regular chocolate chip cookies! Now thanks to this recipe, chocolate chip cookies have become a treat rather than a guilty pleasure!!
