A Greek Salad is a healthy and great lunch. It is very fast to make and very delicious! Given that it is one of my favorite options, I would like to share it today with you guys!
Ingredients:
- ½ cucumber, seeded + chopped
- ½ cup red onion, chopped
- ¾ cup cherry tomatoes, halved
- ¼ cup olives, sliced
- ½ cup feta cheese, crumbled, to taste
- A drizzle of olive oil
- 1 Lemon
- Salt + Pepper
Preparation:
1. In a bowl add the cucumber, cherry tomatoes, red onion, olives, and feta
2. Drizzle olive oil and lemon juice, add salt and pepper
3. Cover with tin foil and leave in fridge for 5-10 minutes (depending on how hungry you are :) )
4. Serve!!
